Spanish-y salad
Required:
- New potatoes in 3 cm chunks
- Half onion, sliced, preferably Spanish
- Clove of garlic, very finely chopped
- 1-2 fresh tomatoes, coarsely chopped
- Tin of tuna (if you're not that vegetarian) and/or
- Small tin of butter beans
- 4 tablespoons olive oil
- Ground black pepper
- Lemon juice
Optional:
- Stoned green olives
- Anchovies
- Cooked green beans
- Hard boiled egg
- Small pieces of cooked cod or hake instead of tuna
Boil the potatoes. Meanwhile, fry the onion gently in the oil until
soft but not at all brown. Then mix in a bowl the chopped (raw) garlic,
the onions and their oil and some lemon juice and ground pepper. Use
this as a dressing for the potatoes, tomatoes and whatever else is going
in. Very nice. Can be eaten warm if you can't be bothered to wait for it
to cool. Don't forget the raw garlic - that's what makes it a meal to
remember.
